Chai has been drunk in Eastern Europe for generations. Now it’s our chance to make it just as you find it in the tea rooms in Prague (without the hubbly-bubbly smokers!), where you can think, write, or read alone or share and chat and feel comfortable and happy.
A unique blend of herbs to spice up the mind and inspire your creativity. Taking the time to make it is just so worth the effort. This is not just a quick tea bag in a mug with water and milk! Chai gives you a real break – it’s a joy to make and time to ruminate.
How to Make Chai
Once you’ve got the spicy Chai mixture, take the quantity you need to make 1 or more cups. Put the herbs in a teapot. Pour boiling water over the herbs (1 cup per person). Allow to steep for 15 minutes. Strain. [At this point you can put the liquid in the fridge for a few hours to chill for added flavour – so you can prepare it at breakfast time for your elevenses or after dinner drink]. Pour into a saucepan. Add 1 cup skimmed milk [can be soya or rice milk, or creamer] per person. Bring to the point of boiling [do not boil] whisking to a froth the whole time. At the point of boiling take off heat and pour into cups or mugs and serve. Wait for the oohs and aahs! Enjoy!
Quick Chai
Take half or 1 teaspoon of Chai Tea put it in a one-cup coffee strainer (or cafetier) add half cup boiling water and half a cup of hot milk. In a minute or two your Chai is ready to drink.
